Whistle Stop Maine Potatoes

5-6 Maine Russet potatoes, peeled and diced

½ cup cornbread mix

1T seasoned salt

Vegetable oil for frying, as needed


Fill a deep skillet with ½ inch of oil and heat to medium-high.


In a large bowl, mix together the potatoes, cornbread mix, and seasoned salt. Carefully add the seasoned potatoes to oil.  Cook, stirring frequently, until tender and lightly brown, 10-15 minutes.


Remove to a paper towel to drain.
