This side dish is light, fluffy, and full of flavor!
- 6 medium Maine potatoes, peeled, boiled and drained
- 2 eggs, beaten
- 4 tablespoons butter
- ½ cup grated Velveeta cheese
- ¼ cup grated Romano cheese
- 1 tablespoon parsley
- ½ teaspoon garlic powder
- salt and pepper to taste
- Combine all ingredients in mixing bowl and whip with electric mixer until smooth.
- Transfer to buttered 1 ½ quart baking dish.
- Bake 30 minutes at 350 degrees.
