Stuffed New Potatoes
Although it is difficult to beat the mouth watering taste of those fresh, new potatoes simply boiled or steamed, here is a suggestion served by culinary arts students at a recent event at the community college in Bangor.
Stuffed New Potatoes 

- 6 new/baby potatoes
- ½ cup blue cheese
- 1 cup cream cheese
- ½ cup bacon bits
- salt/pepper to taste
- ½ cup cheddar cheese
Wash potatoes then cut in half. Steam or boil potatoes in water until semi-soft. Using a small scoop, remove inside of potato. Set aside to cool.
With a hand mixer, mix all ingredients except cheddar cheese. With a small spoon, scoop the filling into the hollowed out potato. Top with cheddar cheese, then bake in the oven at 425 for 15 minutes or until cheddar cheese is browned. Enjoy!
