Soft Potato Clouds

This side dish is light, fluffy, and full of flavor!

Ingredients:

  • 6 medium Maine potatoes, peeled, boiled and drained
  • 2 eggs, beaten
  • 4 tablespoons butter
  • ½ cup grated Velveeta cheese
  • ¼ cup grated Romano cheese
  • 1 tablespoon parsley
  • ½ teaspoon garlic powder
  • salt and pepper to taste

 

Directions:

  1. Combine all ingredients in mixing bowl and whip with electric mixer until smooth.
  2. Transfer to buttered 1 ½ quart baking dish.
  3. Bake 30 minutes at 350 degrees.
